But I can’t have garlic butter, I don’t do dairy.

But! You can!

You probably already have these simple ingredients in the cupboards.

This recipe is quick and easy. It is free from hydrogenated oil, dairy, soy, egg, nut, gluten, wheat, nightshades, sugar and suitable for those on AIP / Auto Immune Protocol Diets and diabetics.

Recommended Serving Suggestion: How about using it instead of a rub on steak, so then you cook the steak in it (no additional oil needed). Finish with a dollop on top. This is ultimate garlic deliciousness, the garlic infuses all the way through the lamb steak. Shut the gate! Yumm!!

  • Three dessert spoons of Coconut Oil (room temp soft)
  • A drizz of Olive Oil (approx. a spoonful)
  • A clove of garlic
  • Two – Three teaspoons of Himalayan Salt
  • One dessert spoon of chilled coconut cream

How To – Allergy Friendly Garlic Butter

Crush the garlic within an inch of it’s life (finely crushed).

Add the coconut oil, combine

Add the olive oil and salt, combine

Add the coconut cream, combine

Spoon into a container/small bowl and refrigerate for about half an hour or until solidified.

I made these as breakfast on the run / a snack idea for my partner, Scott. He can tolerate nuts so I have used them here however the almonds can be omitted from this recipe in favour of double the sunflower seeds.

These are insanely good for you and have a sweet, chewy texture.

The recipe is free from dairy, soy, eggs, gluten, wheat, refined sugar and nightshades.

LSA is a wonderful source of many vitamins and minerals. Scott refers to LSA as “that dust you sprinkle on food”. Making this ‘dust’ into bars is a much more fun and delicious way to eat it!

LSA will provide you with a good dose of healthy omega-3 fats to promote a healthy heart and brain function, and it contains important minerals such as calcium, zinc and magnesium.

Linseed is a great source of omega 3. The essential fats are those which the body is unable to make on its own and therefore need to be included in the diet. They promote healthy heart and brain function and this bar also contains important minerals such as calcium, zinc and magnesium.


Half a cup of linseeds (also known as flaxseeds) with water, soaked for 5 minutes minimum
A third of a cup of activated sunflower seeds (soaked for about an hour – overnight)
A third a cup of almonds
A third cup of saltanas
One mashed banana – or a third cup of honey/maple syrup
Dessicated coconut for sprinkling on top

How to LSA Bars

  1. Pre heat Oven to 180C / 350F, lube it up with grapeseed oil
    Tip: Parchment paper is not friendly to egg-less cooking, avoid using it
  2. In a food processor, whizz up the activated sunflower seeds and saltanas for a minute
  3. Add almonds, whizz up again for a further minute
  4. Transfer to a bowl and add the linseeds, combine
  5. Add the mashed banana, combine

  6. Spread onto a tray and spread into a square shape
  7. Sprinkle on dessicated coconut

  8. Put in the fridge for 15 minutes to harden
  9. Bake for 15 minutes
  10. Fridge again for another 15
  11. Cut into bars

These make an ideal snack as they contain protein, fat and carbohydrate and they help to stabilize blood sugar levels, also curbing sugar cravings.

Vegan Desserts (plus recipe)

Baking is such a lovely gift to give people. They are also so thrilled and touched at the effort and love you put into making something just for them to enjoy.

I surprised my clients with home made truffles at training last night. As a health coach, it’s my honor and responsibility to ensure that my clients learn about the world of vegan desserts!

Once your eyes have opened and your taste buds have danced to the healthy treat Symphony, there is no going back. Why would you go back? You have found the answer, the key to literally baking your cake and eating it too.  It is wonderful that raw / vegan / healthy / allergy desserts are going more mainstream now. This means variety for us in terms of recipes shared online and this means we are seeing healthy treats popping up in shops as well. Hurrah!

There is a weird stigma with vegan desserts though. It’s that some people seem so concerned with what’s in them, even though they are usually real food products. Then they shut down the dessert without trying it, “oh no, I won’t eat that. I don’t like dates”. Dates to vegan desserts is like sugar or salt to traditional baking, we wouldn’t sit there and eat a cup of sugar or enjoy a spoon of salt but they are essential ingredients to cooking used to add and enhance flavor. This dessert doesn’t taste like individual dates, just like traditional desserts don’t taste like baking soda or flour, tastes like chocolate. Try it before you knock it down.

The truffles are suitable for vegans, vegetarians and those who have quit sugar, or cannot tolerate dairy, soya, egg, gluten, wheat and nightshades.

Ingredients for basic truffles:

Note: My clients can tolerate nuts so I have used them here however this recipe works wonderfully without nuts.

  • One cup desiccated coconuts
  • One cup medjool dates or dates soaked in warm water for 20minutes
  • Half a cup activated cashews (soak in hot water for an hour if possible but can be used unsoaked)
  • Half a cup hazlenuts
  • Three dessert spoons of cocoa

Whizz in the food processor for a minute, scrape sides then whizz for another minute.

Using fingers,  form into ball shape.

Enjoy without guilt!! These are so good for you that they can be eaten at breakfast time.

Fresh out of the oven – Bun Thyme

For all the bread loving allergy foodies out there – warm, simple bread buns fresh out of the oven. Delicious with a little garlic butter (melted coconut oil plus crushed garlic, salt and oil then firmed back up in the fridge).

I was unsure about posting this recipe but my Mum and brother absolutely loved these when I served them up so I hope you will love them too.

These are so inexpensive, a packet of flour is $5.50 from Countdown supermarkets. A packet yields approximately 15 buns.20141119_08325120141119_083243

The ingredients are:

  • Edmonds self raising Gluten, Dairy, Wheat and Yeast free flour
  • Water
  • Thyme
  • Himalayan salt
  • Optional ground linseed (1:3 ratio with flour)

Of course, this is free from dairy, soya, egg, nut, yeast, wheat and gluten however it is not nightshade free as there is a little potato starch in the flour.

How to: Bun Thyme

Combine flour, thyme and salt (and optional ground linseed) with water to make a dough. Add small amounts of water at a time until the consistency looks like this (linseed dough):

Set a wok up with boiling water. You will be dropping the buns in, as you would if you were making British dumplings.

Turn your oven onto max grill and 180C / 356F. Lighly olive oil a tray.

Using your hands, fashion the dough into bun shape balls and drop into the boiling water for two minutes, then using tongs and an egg slice, flip over. Let them sit for another two minutes.

Place on the tray and brush the top with additional olive oil, thyme and himalayan salt.

Grill for 5 minutes each side. They stick a little to the bottom so be careful when you are flipping.

Enjoy the crunchy outer and warm bread bun inner straight out of the oven. They don’t keep for very long (they harden up) so be sure to prepare as you need them.
